FRIED  VERMICELLI

Fried Rice Vermicelli - easy rice noodles recipe stir-fried with chicken, bean sprouts and scallion. Learn how to cook vermicelli at home with this recipe!

INGREDIENTS

1.  8 oz. (226 g) rice vermicelli

2.  1 handful fresh bean sprouts

3.  8 oz. (226 g) boneless & skinless chicken breast, cut into small pieces

4.  1 teaspoon corn starch

5.  4 tablespoons cooking oil

6.  3 cloves garlic, minced

7.  3 stalks scallion, cut into 2-inch (5 cm) length

SEASONING SAUCE:

1.  4 tablespoons soy sauce (Kimlan Light Soy Sauce)

2.  1 tablespoon sweet soy sauce (ABC Brand)

3.  4 tablespoons water

4.  1 tablespoon sugar

5.  3 dashes ground white pepper

INSTRUCTIONS

1.   Soak the rice vermicelli in warm water for 30 minutes or until they turn soft. Drain the rice noodles in a colander.

2.   Rinse the bean sprouts with water and set aside to drain. Lightly coat the chicken meat with the corn starch. This step will tenderize the  chicken.

3.   Mix all the Seasoning Sauce ingredients in a small bowl. Set aside.

4.   Heat up a wok or skillet on high heat. Add the cooking oil. When the oil is heated, add the minced garlic. Stir-fry until aromatic or turn light brown. Add in the chicken and stir fry until the chicken turn white on the surface.

5.   Add the rice vermicelli noodles and the Seasoning Sauce. Stir the rice noodles continuously to blend well with the sauce. Continue to stir fry for 2-3 minutes or until noodles turn soft or no longer wet. Add the bean sprouts and scallions. Stir-fry for another minute or until the bean sprouts are cooked. Dish out and serve immediately.

Longkou Vermicelli , or called Cellophane noodles ,sometimes called glass noodles, are a type of transparent noodle made from starch (such as mung bean starch, potato starch, sweet potato starch, tapioca, or canna starch) and water.
They are generally sold in dried form, soaked to reconstitute, then used in soups, stir-fried dishes, or spring rolls. They are called "cellophane noodles" or "glass noodles" because of their cellophane- or glass-like transparency when cooked. Cellophane noodles should not be confused with rice vermicelli, which are made from rice and are white in color rather than clear (after cooking in water).
Cellophane noodles are made from a variety of starches. In China, cellophane noodles are usually made of mung bean starch. Chinese varieties made from mung bean starch are called Chinese vermicelli, bean threads, or bean thread noodles. Thicker Korean varieties made with sweet potato starch are called sweet potato noodles or dangmyeon.
Cellophane noodles are available in various thicknesses. Wide, flat cellophane noodle sheets called mung bean sheets are also produced in China. In Korea, napjak-dangmyeon (literally "flat dangmyeon") refers to flat sweet potato noodles.
