3. What is the difference between glass noodles and rice vermicelli?

• Glass noodles (Longkou vermicelli): Made primarily from mung bean starch, they are translucent, elastic, and remain clear after cooking. They do not turn mushy easily and are ideal for hot pot, soups, and stir-fries.
• Rice vermicelli: Made from rice flour, they are opaque white, softer in texture, and tend to absorb flavors well. They are commonly used in Asian noodle soups and salads.

4. How to cook rice vermicelli?

1. Soak the dry vermicelli in warm water for 5-10 minutes until soft.
2. Bring a pot of water to a boil, add the soaked vermicelli, and cook for 2-3 minutes (do not overcook).
3. Drain and rinse with cold water to stop the cooking process and remove excess starch.
